For the second day in a row, I’ve been snowed in. With dwindling food supplies, and a very long walk to the supermarket – I decided to test my abilities as a housewife. I put a Bacon, Barley & Vege Soup on the fire to slow cook over 5 hours, and left some bread proving in a pot overnight. This morning I baked the bread in our new cast iron Le Crueset casserole dish (super sexy!) and voila! Delicious.
I swear this bread is the best I’ve ever tasted. It’s like Ciabatta but more rustic and less hole-y. Not only is it the best bread in the world – it’s the easiest! This was my first attempt at baking bread in around 6 years and it came out perfect! You can find the excellent recipe here.
For the soup, I finely chopped an onion, 3 carrots, a leek, 3 stalks of celery, and sauteed them in the casserole dish for around 10 mins, then added water to the top, a cup of pearl barley, and 2 bacon bones. I let it slow cook on the fire for around 5 hours, skimming the scum off the top a couple of times, and it was ready! No need to add salt or pepper – it’s perfect as is. Best lunch I’ve had in a long time!! Here’s to more snow days!!
